Recipe: No-Bake Energy Bites

I'm not being modest when I say I have no skill with the stove and/or oven, so, I feel head-over-heels for these "healthier" version of the plumping no-bake cookies. Here's what you'll need:

  • 1/2 Cup Ground Flax Seed
  • 1/2 Cup of Oats
  • 1/2 Cup of Chocolate Chips
  • 1/2 Cup of Crunch Peanut Butter
  • 1/3 Cup of Honey
  • 1 tsp of Vanilla Extract
  • 2 tsp of Cinnamon (or to taste)

 

The flax seed, peanut butter, and oats are great sources of protein and using honey to sweeten instead of processed sugar to my favorite. Side Note: my friend's family runs a honey business in Defiance, Iowa called Smitty Bee Honey - I would highly recommend going local for your honey needs!

Step 1: Combine all above ingredients into a large bowl:

Step 2: Get an outsider's opinion about how the process is going:

Step 3: Mold into bite size balls

Step 4: Freeze for about an hour

.

Step 5: Enjoy!

I got about a dozen bites out of this recipe, and they keep quite well. Next time I'll probably double the recipe and bring some for the Revival Ladies <3
