Summer Shop Crawl: Cucumber Cooler Recipe
We had so many recipe requests last year for our Cucumber Cooler we're now serving annually at ICDD Summer Shop Crawl - we decided to share :)
Cucumber (Elderflower) Cooler
A super refreshing summer cocktail. The combination of lime and cucumber make this cocktail fresh & cool and the hint of elderflower adds a nice floral vanilla finish.
Perfect for a hot summers day or to cool off after an invigorating shopping spree at your favorite local store :)
INGREDIENTS:
-Vodka
-English Cucumber
-Club Soda
-Elderflower syrup
-Limes
DIRECTIONS:
1. To infuse vodka--Peel and slice up one english cucumber, combine with 3 cups vodka, store in jar with lid and refrigerate until ready to use, shaking periodically. ****Must be done 5-7 days in advance****
For one cocktail:
Combine 2 oz infused vodka with 1/2 oz elderflower syrup and the juice of 1 lime.
Shake.
Pour over ice and fill rest of glass with club soda.
Garnish with sliced cucumber.
Enjoy.
